- 1 (11 oz) bag caramel bits
- 2 tbsp heavy whipping cream
- 1 1/4 cups semi-sweet chocolate chips
- 1 tbsp vegetable oil
- 1 1/2 cups pecans chopped
Insert a toothpick into each marshmallow and place them upright on a sheet pan lined with parchment paper or a silicone mat. Set aside.
In a microwave safe bowl, combine caramel bits and heavy whipping cream. Microwave in 30 second intervals, stirring in-between until the caramel is melted and smooth.
Dip each marshmallow into the melted caramel, let any excess drip off, then return to the prepared baking sheet and transfer to the fridge for 30 minutes to set the caramel.
In another microwave safe bowl, combine chocolate chips and vegetable oil. Microwave in 30 second intervals, stirring in-between until the chocolate is melted and smooth.
Pour the chopped pecans into a small, shallow bowl, then dip each caramel coated marshmallow into the melted chocolate, let the excess drip off, then roll directly into the chopped pecans.
Return to the prepared baking sheet and transfer to the fridge for 30 minutes to set the chocolate.
Remove all toothpicks before enjoying!
