Phyllo cups with a crisp outer edge and flakey layers, filled with creamy, zesty key lime filling and topped with whipped cream, graham cracker crumbs, and lime zest. They’re crispy, creamy, and the best twist on a classic key lime pie.
I love these mini tarts because the tangy filling ingredients just melt in your mouth plus you get a nice crunch from the phyllo shell. My favorite thing is how easy mini key lime pies are to make and that they can even be made ahead for your get-togethers!

How to make the best Key Lime Pie Bites:
- Preheat your oven to 350 degrees. Place the store-bought phyllo shells onto a baking sheet and bake for 5 minutes or until lightly golden brown.
- In a medium mixing bowl, combine sweetened condensed milk, sour cream, lime juice, and 1 tbsp lime zest, then mix until smooth and creamy.
- Spoon about 2 tsp of filling into each phyllo shell, then bake for 5-7 minutes. Remove from the oven and let cool for 10 minutes.
- Transfer the key lime bites to the refrigerator for at least 1 hour or until ready to garnish.

My top tips:
- PHYLLO SHELLS: Athens frozen phyllo shells are the best for this recipe! They don’t require any thawing, are perfectly bite-sized, and very light and flakey all at the same time! Find yours easily in the freezer section with the traditional phyllo dough and puffed pastry, usually near the frozen cakes and pies.
- LIME ZEST: Try to remember to zest your limes before squeezing all the juice out of them. This makes zesting much easier since the limes are still firm and in one piece. Remember to reserve a little zest for garnishing later too!
- FILLING: Using a small triggered cookie scoop, or transferring the key lime filling into a piping bag or Ziploc bag helps control how much filling you’re adding into the phyllo shells and in turn keeps them nice and neat.
- CHILLING: You’ll want to make sure these Key Lime Pie Bites are fully chilled before garnishing and enjoying! In fact, feel free to make these the day before, chill them overnight, and garnish them for serving the following day!
- COOL WHIP: Although I love the convenience of topping these with thawed Cool Whip, if you want to top these bites with homemade whipped cream, don’t let me stop you! Just make sure the bites are fully chilled before garnishing.
- STORING: Transfer any leftovers to an airtight container and store in the fridge for up to 4 days. Best enjoyed within 2 days to ensure the phyllo cups maintain their crispy texture.
