My top tips:
- LINING YOUR PAN: Don’t skip the step of lining your pan with parchment paper or a silicone mat! Lining your pan prevents the bark from sticking and makes it easy to peel up and break or cut into pieces once chilled.
- MICROWAVING: I recommend microwaving the white chocolate and vegetable oil in 30 second intervals to prevent any burning. White chocolate can be especially temperamental and prone to clumping, so it’s important to melt it down slowly.
- VEGETABLE OIL: Adding a little vegetable oil to the chocolate chips is my secret trick for silky smooth chocolate every time! The vegetable oil thins out the chocolate and makes it much easier to evenly coat the crushed Oreos.
- OREO VARIETY: I’ve used both double stuffed Oreo’s and the original Oreo cookies and both work great. You can really use any variety of Oreo to customize this bark and make it your own. My favorite is this classic cookies and cream version, but other fun ones to try are the Birthday Cake Oreos, Double Chocolate Oreos or the Red Velvet Oreos!
- BREAKING THE OREOS: I recommend breaking the Oreos into smaller pieces using your hands or roughly chopping them with a knife. I would not use a food processor here because the Oreos can turn into crumbs very quickly and that will result in a grey colored Oreo bark.
- TOPPING: The wet chocolate acts as a glue for the Oreo pieces to stick to, so it’s important to top the bark with the remaining crushed Oreo cookies before the white chocolate has set.
- CHILLING: You can let this bark set up at room temperature, but it will take hours for the chocolate to fully harden. To speed up the process, feel free to place it in the fridge for 20 minutes (or freezer for 15 minutes) or until firm.
- STORING: I like to transfer this bark into the fridge to let the chocolate set up faster, then I cut it into pieces and store in an airtight container in the fridge for up to 2 weeks.
