- 1 1/2 cups sweetened shredded coconut toasted and divided
- 1 (8 oz) block cream cheese softened
- 1 (7 oz) jar marshmallow fluff
- 1 (8 oz) container Cool Whip thawed
- 1 (8 oz) can crushed pineapple
Preheat your oven to 350 degrees F and pour the sweetened shredded coconut onto a baking sheet.
Toast the coconut in the oven for 10-15 minutes, making sure to toss it around every 3-5 minutes so it doesn’t burn, then set aside to cool.
Combine softened cream cheese with the marshmallow fluff and mix until smooth, then fold in the thawed Cool Whip.
Add in the crushed pineapple and 1 cup of the toasted coconut from earlier then fold to combine.
Transfer the dip into a serving dish and spread it into an even layer. Refrigerate for at least 1 hour.
When you're ready to serve, top with the remaining toasted coconut and however many maraschino cherries your heart desires!
