How to make the best chewy white chocolate cranberry cookies:
- Preheat your oven to 350 degrees. Line baking sheets with parchment paper and set aside.
- In a large bowl, mix together butter, sugars, eggs and vanilla extract until smooth.
- Sprinkle in the flour and baking powder, then mix to form a dough. Fold in one cup of white chocolate chips and 1/2 cup of dried cranberries.
- Portion the cookie dough into heaping tablespoons. Place onto the prepared baking sheets and bake for 10-12 minutes or until golden on the edges.
- Once cooled, melt the remaining cup of white chocolate chips in the microwave in 30-second increments, stirring in between until smooth.
- Drizzle the white chocolate over the cooled cookies and immediately top with the remaining dried cranberries for garnish.
- Let the white chocolate has harden before enjoying!
My top tips for success!
- You’ll want to scoop this dough into 1.5 to 2 inch balls and avoid flattening too much. These will spread in the oven so be sure to leave a few inches in between each cookie on the baking sheets.
- If you opt to ‘decorate’ the cookies by drizzling extra white chocolate and topping with cranberries, be sure to sprinkle on the extra dried cranberries before the white chocolate has set. This will ensure the cranberries stick to the tops of each cookie!
- Once the chocolate has set, store these cookies at room temperature for up to 4 days!
