These soft and chewy sugar cookie bars have all the flavors of traditional sugar cookies but with no chilling, rolling or cutting the dough required! They’re topped with a silky cream cheese frosting and Christmas sprinkles can be switched out with sprinkles for any occasion!

Cream cheese icing and sprinkles are two things hard to not love! The frosting on these cookie bars is so creamy and the perfect amount of sweetness to complement the thick and chewy sugar cookie underneath!

Ingredients you’ll need:

  • Softened butter
  • Granulated sugar
  • Egg
  • Vanilla extract
  • Almond extract
  • All-purpose flour
  • Baking powder

For the frosting:

  • Softened butter 
  • Softened cream cheese
  • Vanilla extract
  • Powdered sugar
  • Milk
  • Sprinkles for topping

Try these delicious sugar cookie bars any time of year! All it takes is swapping out your festive sprinkles for birthdays, Valentines Day, Halloween, Easter, the list goes on!

How to make the best frosted sugar cookie bars:

  • Preheat your oven to 350 degrees F and line a 9×9 baking pan with parchment paper.
  • In a large mixing bowl, cream together butter, sugar, egg, vanilla extract and almond extract.
  • Once smooth, sprinkle in flour and baking powder. Mix to form a dough.
  • Press the dough into the bottom of your parchment lined baking pan and bake for 20-22 minutes.
  • While the cookie base is baking, make the frosting by combining butter, cream cheese, vanilla extract, powdered sugar and milk. Mix until smooth.
  • Spread the frosting all over the surface of the cooled sugar cookie base. Finish with your sprinkles of choice before cutting into bars.

My top tips for success!

  • Making the dough is pretty straight forward, but it is quite thick, which can make it challenging to spread into your baking pan. I recommend wetting your hands and pressing the dough into the pan using your fingertips. It doesn’t have to be perfect- the oven will take care of any imperfections!
  • If you want clean looking bars, transfer the cookie pan to the fridge for 1-2 hours before slicing the cookies into bars. This gives the frosting a chance to firm up so that it holds shape when sliced.
  • This recipe can easily be doubled to feed a crowd! Just be sure to bake it in a 9×13 pan.
