These Chocolate Strawberry Crunch Bites are a chocolate covered strawberry reimagined. They’re the perfect ratio of chocolate to strawberry, they’re easy to make, and they have a satisfying crunch!
You only need 4 ingredients to prep these Strawberry Crunch Bites and the crunch really goes a long way here. I love the fresh twist to them too with the sweet, juicy strawberries on top. I had some leftover cereal from making rice krispie treats and wasn’t sure what to do with it (not my personal favorite bowl of cereal) so these quick and easy dessert bites were perfect!
How to make the best Strawberry Crunch Bites:
- In a microwave safe bowl, combine the chocolate chips and butter. Microwave in 30 second intervals, stirring in between, until melted and smooth.
- Pour in your Rice Krispies, then mix to combine. Evenly divide the chocolate mixture between your mini muffin tin cups, then top each one with a slice of strawberry.
- Transfer to the fridge for at least 30 minutes to let the chocolate firm up before enjoying.

My top tips:
- SILICONE MUFFIN TIN: I like using a silicone mini muffin tin for these Strawberry Crunch Bites because the bites easily pop out of the cups without any liners or greasing required. If you don’t have a silicone muffin tin, you’ll need to use mini muffin tin liners to prevent sticking.
- MICROWAVING: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. It’s nearly impossible to reverse clumpy, burnt chocolate, so it’s important to melt it down slowly.
- STRAWBERRIES: Only use fresh berries here as frozen strawberries will become too mushy once they thaw. I like slicing my strawberries into quarter inch rounds, but feel free to make them as thin or as thick as you like.
- CHILLING: You can let these bites set at room temperature, but it will take hours for the chocolate to fully harden. To speed up the process, feel free to place them in the fridge for 30 minutes to set the chocolate.
- STORING: This is one of those recipes that tastes best day of so that the strawberries won’t have time to release their juices and become mushy. Leftovers will keep in an airtight container in the fridge for 2 days but again, these really are best enjoyed day of.

If you’re making this ahead of time, you can try using freeze-dried strawberries instead of fresh ones. I prefer fresh, but it’s a good swap if you’re saving them for later or need to make them in advance.
