My top tips:
- LINING YOUR PANS: Don’t skip the step of lining your baking pans! This will prevent any sticking and makes it MUCH easier to just lift the bars out of the pan once they’re frozen to slice them up.
- BROWNIE MIX: I swear the Ghirahdelli double chocolate brownie mix is just as good (if not better) than any other brownie recipe I’ve tried. If you’d still like to make yours from scratch, just be sure you use a recipe that traditionally fits a 9×9 pan.
- COOKIE DOUGH: Cutting the log of premade cookie dough into rounds makes it much easier to evenly press the dough into a crust shape. If you don’t want to cut rounds, you can also pinch off pieces of cookie dough and drop them sporadically into the baking sheet, then press into a single layer from there.
- COOLING: It’s very important you let the brownie and cookie layers cool completely before assembling the ice cream sandwiches. If the brownie and cookie layers aren’t cooled, they won’t have enough structure and will break during assembly.
