Using peanut butter sandwich crackers is a convenient base for coating in a buttery brown sugar sauce and topping with a sprinkle of cinnamon sugar. The result resembles a crunchy churro treat but with less steps and way more convenience!
Ingredients you’ll need:

- Butter
- Brown sugar
- Vanilla extract
- Granulated sugar
- Cinnamon

Ritz crackers have always been a favorite of mine and when they’re coated in a brown sugar sauce and cinnamon sugar, it’s game over!!! With just 6 ingredients and less than 30 minutes, you’ll be on your way to enjoying these addicting crackers in no time!
How to make the best ritz churro bites:
- Preheat your oven to 350 degrees F and line a baking sheet with parchment paper. Spread the sandwich crackers into an even layer on the baking sheet, then set aside.
- In a saucepan over medium heat, melt together butter, brown sugar, and vanilla extract. Once melted, remove from heat, and evenly pour over the crackers.
- Bake for 10 minutes, flipping and tossing halfway through. While the crackers are baking, combine the granulated sugar and cinnamon in a small bowl.
- Sprinkle the cinnamon sugar evenly on top of the crackers when they come out of the oven. Let them cool completely, then break apart before serving.
- I love serving these buttery and sweet snack crackers for parties, tailgates, or gifting them around the holidays because they’re perfect for making ahead of time! Let them cool completely, then store them in a container at room temperature for up to a week.
My top tips:
- Avoid cooking the brown sugar sauce for too long. You’re just cooking it enough to melt the butter and sugar. This is what will give the crackers a perfectly crisp, yet slightly chewy exterior.
- You may find it tough to toss the crackers in the hot butter and brown sugar sauce without crushing them but remember this doesn’t have to be perfect! Just be sure each cracker is lightly coated. I like using a rubber spatula for this step.
- Sprinkle the crackers with cinnamon sugar right when they come out of the oven so that the sugar sticks to the coating on the crackers. It’s important to do this before the coating has hardened and set.
- Once the crackers are cooled, give them a toss with your fingers to be sure some cinnamon sugar gets onto both sides. You can sprinkle with extra cinnamon sugar if you like!
- If you have a nut allergy or can’t find Ritz bits, feel free to use ritz mini crackers as a substitute in this recipe.
- I recommend storing these snack crackers at room temperature for the best crunchy texture. Transferring to the fridge or freezer may make them soggy.
