I can confidently say this is a no-fail recipe. Stuffed strawberries are SO easy to make and take less than 30 minutes to whip up. You just can’t go wrong with this stuffed strawberry recipe. It only makes sense because they’re made up of all the delicious things – Oreos, cream cheese, and chocolate! The rich chocolate truffle centers pair perfectly with the fresh, juicy strawberries for a decadent treat everyone will love!
Why have traditional chocolate covered strawberries when you could have these Oreo truffle stuffed strawberries? They’re perfect for Valentine’s Day, the holidays, or any time you feel like making a bite-sized dessert that looks fancy without a whole lot of effort!
How to make the best Oreo truffle stuffed strawberries:
- Wash and dry your strawberries, then slice off the tops, and hallow out the centers with a melon baller. Using a paper towel, wipe the inside of the berries as dry as possible.
- In the bowl of a food processor, combine 30 Oreos with softened cream cheese. Pulse to form a thick paste consistency, stopping to scrape down the sides of the food processor as needed.
- Roll the Oreo mixture into balls roughly ½ an inch in size, then stuff one ball into the center of each strawberry cavity and place them on a baking sheet lined with parchment paper or a silicone baking mat.
- Pour your chocolate chips into a microwave safe bowl and microwave in 30 second intervals, stirring in-between, until melted and smooth. Set aside.
- Add the remaining Oreos into your food processor and pulse into fine crumbs. Transfer the crushed Oreos into a small bowl.
- Dip the cut end of each truffle filled strawberry into the melted chocolate, then dip into the bowl of crushed Oreos and return to the prepared baking sheet.
- Transfer to the fridge to set the chocolate before enjoying!
I took the classic Oreo truffle mixture and put it inside a chocolate-covered strawberry. Yep. I went there. Your loved ones will adore these as gifts, but if you want to keep them all to yourself… I can’t say I blame you!
Luckily, they’re so easy to make and all you need are 2 ingredients to make the easy Oreo truffle filling! Choose regular, golden, or another flavor of Oreo cookies, mix with a little cream cheese, and you’re ready to roll Just don’t use double stuffed cookies- because the mixture becomes too sticky from all that extra filling.
My top tips:
- MELON BALLER: You can use a melon baller or a paring knife to hallow out the inside of each strawberry. I prefer using a melon baller because it prevents me from puncturing the sides of the strawberries.
- DRY STRAWBERRIES: It’s very important that you dry the inside of each strawberry with a paper towel. You don’t want any excess juice in the strawberries because it will make the whole thing soggy.
- FOOD PROCESSOR: No food processor? No problem! Using a food processor ensures even, fine crumbs, but if you don’t have one, you can put the cookies in a large resealable bag and crush with a rolling pin, mallet, or something similar. Just be sure that there aren’t any large chunks of cookies left when you’re done.
- SOFTENED CREAM CHEESE: Softened cream cheese is key in this recipe! It’s super important to make sure your cream cheese is fully softened so that it incorporates into the other ingredients easily and ensures your filling will be super smooth rather than lumpy.
- TOPPING: Once the strawberries have been dipped in the melted chocolate, you can leave them as is or go ahead and dip them in some crushed Oreos for a fun finishing touch! Chocolate sprinkles would here as well.
- CHILLING: You’ll want to transfer these stuffed strawberries in the fridge for 15 minutes to set the chocolate. I enjoy these best directly from the fridge, so if I were you, I would just refrigerate until serving.
- STORING: This is one of those recipes that is best enjoyed day of so that the strawberries don’t become too soft or soggy. I do not recommend storing these for more than 1 day in the fridge.
