These easy chocolate covered raspberry clusters are the perfect balance of sweet and tart flavors. Juicy raspberries are coated in creamy white chocolate and/or semi-sweet chocolate, and frozen for a perfectly refreshing dessert. Enjoy them as a post dinner snack or special Valentine’s day treat!

It’s no secret white chocolate and raspberry just go together. Especially when you add white chocolate too! They’re a match made in heaven. It’s the perfect treat for any weeknight, girl’s night, or hot summer day. Here’s why you’ll love them:

  • You only need 3 ingredients (4 if you use more than one kind of chocolate).
  • No baking required.
  • Healthy frozen snack on demand.

Ingredients you’ll need:

  • Raspberries 
  • White chocolate chips
  • Semi-sweet chocolate chips 
  • Vegetable oil 

I love raspberries and I love chocolate, so for me, these chocolate covered raspberry clusters are the perfect combination! They’re a bite-sized indulgence in an easy recipe that’s perfect for any occasion, from Valentine’s Day to an easy summer gathering. These will satisfy your sweet tooth without the guilt! 

Chocolate Raspberry Clusters taste like a healthier version of raspberry truffles. Juicy raspberries and rich chocolate come together to form a cluster that pops with bright, fruity and rich chocolaty flavors. 

Who doesn’t love the combination of fruit and chocolate? This classic combination has been around for years and for good reason! Chocolate Raspberry Clusters combine the tart sweetness of raspberries with rich, smooth chocolate, making them a perfect treat for any occasion. Plus, it takes no time at all to whip up these fruity and chocolatey treats. The hardest part is being patient enough for them to freeze!

How to make the best Chocolate Raspberry Clusters:

  • Pour the raspberries into a medium mixing bowl and mash them with the back of a fork until they are fully broken down. 
  • Spoon clusters of the mashed raspberries onto a baking sheet lined with parchment paper or a silicone baking mat, then transfer to the freezer for a minimum of 2 hours or until they are fully frozen.
  • Pour the white chocolate chips into a microwave safe bowl with 1 tbsp of vegetable oil. Microwave in 30 second intervals, stirring in-between, until melted and smooth. 
  • Repeat the melting process with the semi-sweet chocolate chips, then coat half of the clusters in the melted white chocolate and the other half in the melted semi-sweet chocolate.
  • Transfer the remaining white chocolate into a ziploc bag, cut off one end, then drizzle the white chocolate over the semi-sweet chocolate coated clusters. 
  • Transfer the remaining semi-sweet chocolate into a ziploc bag, cut off one end, then drizzle the semi-sweet chocolate over the white chocolate coated clusters.
  • Return the chocolate-dipped raspberry clusters back into the freezer for 30 minutes or until set through.
  • Once set, carefully break off the excess candy-coating pieces around each cluster before enjoying!

These Chocolate Raspberry Clusters are seriously my new favorite treat! They’re the perfect balance of tangy and sweet, and a great snack to make for the spring/summer season. Whenever you get the craving for something sweet and chocolatey, all you’d have to do is pull them out of the freezer and enjoy!

This recipe can be customized to any type of chocolate you desire. I like the combination of both semi-sweet and white chocolate, but using just one is perfectly fine and completely based on personal preference! 

I’m a big believer in keeping it simple. And these Chocolate Raspberry Clusters are a perfect example. Made with just a few ingredients, but oh so tasty, they’ll satisfy your chocolate cravings in no time!

My top tips:

  • LINING YOUR PAN: Don’t skip the step of lining your pan with parchment paper or a silicone mat! This is super important especially when covering the raspberry clusters in chocolate. Lining your pan prevents sticking and makes it easy to peel up the clusters once they’re set.
  • RASPBERRIES: Frozen raspberries are just as good as fresh ones, since they are flash-frozen at peak ripeness, and all we’re doing is mashing them up anyway! I enjoy the tang of fresh raspberries here, but feel free to sweeten them with a little honey or sugar if you’d like.
  • FREEZING: You’ll want to fully freeze these Chocolate Raspberry Clusters before coating them in the melted chocolate. This ensures the clusters will hold their shape when being tossed around in the bowl of chocolate. 
  • MELTING CHOCOLATE: I recommend microwaving the chocolate in 30 second intervals to prevent any burning. I also like adding vegetable oil to the chocolate to thin it out a little and make it a better consistency for coating. You could use coconut oil for a similar result.
  • WORKING QUICKLY: These frozen raspberry clusters will melt quickly, so I recommend coating them in chocolate immediately after removing them from the freezer. If they start to soften, return them to the freezer to firm back up before you continue coating them in chocolate. 
  • COATING: After you coat each cluster, tap it against the bowl so the excess chocolate drips off. You’ll also want to scrape all the excess chocolate off the bottom so that it won’t create a pool or “foot” of chocolate once placed on the baking sheet.
  • CHOCOLATE DRIZZLE: I find it helpful to transfer the remaining melted chocolate into Ziploc bags before cutting off one end and drizzling. This makes the chocolate drizzle more evenly and keeps things mess free.
  • STORING: Once the Chocolate Raspberry Clusters are set up, transfer them into an airtight container and store them in the freezer for up to 2 months. I recommend letting them sit on the counter for 1-2 minutes before biting into them – this allows them to soften just a bit!
