Why you’ll love this recipe:

Cake Mix Coffee Cake Cookies have everything you love about a classic slice of coffee cake, but in the form of a soft, tender cookie! Think fluffy, cake-like centers, buttery cinnamon streusel crumbs, and a sweet vanilla icing drizzle on top. Seriously, what’s not to love?

The best part is how easy these cookies are to make! Thanks to a boxed cake mix, you can skip a lot of the measuring and mixing that comes with traditional cookie recipes. Add a simple homemade cinnamon streusel topping and a drizzle of vanilla icing, and you’ve got the most delicious coffee cake cookies with hardly any fuss.

These cookies are perfect for breakfast, brunch, an afternoon coffee break, or anytime you’re craving something sweet and cozy. If you love cinnamon coffee cake, you’re going to want to save this recipe!

Ingredients you’ll need:

  • Vanilla cake mix
  • All-purpose flour
  • Cornstrach
  • Cinnamon
  • Eggs
  • Butter- melted
  • Sour cream

Streusel topping:

  • All-purpose flour
  • Brown sugar
  • Cinnamon
  • Butter- melted

Icing:

  • Powdered sugar
  • Heavy whipping cream
  • Vanilla extract

These Cake Mix Coffee Cake Cookies taste just like coffee cake in cookie form! They’re soft, tender, and packed with that warm cinnamon-sugar flavor that makes coffee cake so irresistible. The buttery streusel topping adds the perfect crumbly texture, and the vanilla icing drizzle brings everything together.

I also love how simple they are to make. Using cake mix as the base means you don’t have to start from scratch, making this an easy cake mix cookie recipe that’s perfect when you want something homemade without spending hours in the kitchen.

And can we talk about that cinnamon streusel? It’s honestly one of the best parts! The sweet, buttery crumbs on top make these cookies taste like little individual coffee cakes. Add the icing drizzle, and they look just as good as they taste.

Another reason to love these cookies is their texture. The cookie base is soft and tender, almost like a little bite of cake, while the streusel adds a delicious contrast with its sweet, crumbly topping. Every bite has the perfect combination of cinnamon, brown sugar, and vanilla.

Whether you’re baking for a weekend brunch, bringing treats to a get-together, or just want something delicious to enjoy with your morning coffee, these cinnamon streusel cookies are always a good idea!

How to make the best Coffee Cake Cookies with cake mix:

  • Preheat your oven to 350 degrees F and line two baking sheets with parchment paper or silicone baking mats.
  • Make the cookie dough by combining the vanilla cake mix, flour, cornstarch and cinnamon in a medium bowl and whisk until everything is evenly combined.
  • Add the eggs, melted butter and sour cream to the dry ingredients and mix until a thick dough forms.
  • Use a 2 tbsp cookie scoop to scoop the cookie dough onto the prepared baking sheets, then use your thumb to make an indentation in the middle of each cookie dough ball.
  • For the streusel topping, combine flour, brown sugar and cinnamon. Pour in the melted butter and mix until you’re left with a slightly wet, crumbly streusel mixture.
  • Add 1 tbsp of the streusel topping to the middle of each cookie then bake for 9-11 minutes or until the cookies are set and the bottoms are a light golden brown.
  • Once the cookies are cooled, combine the icing ingredients and whisk until smooth. You may need to add more heavy cream to get a thinner consistency for drizzling.
  • Drizzle the icing on top of each cooled cookie, then let the icing set up for about 30 minutes before enjoying!

Classic coffee cake has a soft, tender base, a sweet cinnamon crumb topping, and often a light drizzle of icing. These cookies bring all three elements together in one easy treat!

The cake mix creates a soft, cake-like cookie, while the cinnamon streusel adds that familiar brown sugar sweetness and buttery crumb. The vanilla icing ties everything together, giving each cookie the perfect balance of sweetness and warm cinnamon flavor.

I love that you get a little bit of everything in every bite. Instead of cutting into a coffee cake and hoping for a piece with plenty of streusel, each cookie gets its own generous topping. That means no fighting over the best piece!

And despite the name, you don’t actually need coffee to make coffee cake! It’s traditionally enjoyed alongside a cup of coffee, which makes these cookies the perfect little treat to serve with your favorite morning brew.

They’re also a fun alternative to traditional coffee cake when you want something easy to grab and enjoy. There’s no need for plates or forks, and they’re simple to pack up for sharing. If you’re a fan of cinnamon crumb cake, cinnamon rolls, or anything with a buttery streusel topping, these cookies are right up your alley.

My top tips:

  • COOKIE DOUGH: Don’t overmix the cookie dough! Mix the ingredients just until everything is combined to help keep your cookies soft and tender. Overmixing can affect the texture, and we want these cookies to have that delicious cake-like softness.
  • CAKE MIX: Use yellow, white, or vanilla cake mix. These flavors give the cookies a sweet, buttery base that pairs perfectly with the cinnamon streusel topping. You can experiment with other cake mix flavors, but white or vanilla are my favorite for that classic coffee cake taste.
  • CREATING INDENTATIONS: Before pressing indentations into each cookie to hold the cinnamon streusel topping, lightly wet your fingertips with water first. This helps keep the sticky cookie dough from clinging to your fingers and makes it much easier to shape each cookie!
  • CINNAMON STREUSEL: Make plenty of cinnamon streusel. The buttery brown sugar and cinnamon crumbs are one of the best parts of these cookies, so don’t be shy with the topping! Be sure to gently press the streusel into the cookie dough to help it stay in place while baking.
  • BAKING: Don’t overbake the cookies. For soft, tender coffee cake cookies, remove them from the oven when the edges are set and the centers still look slightly soft. They’ll continue to set as they cool, so you don’t want to leave them in the oven too long.
  • COOLING: Let the cookies cool before adding the icing. I know it’s tempting to drizzle that sweet vanilla icing on right away, but giving the cookies time to cool makes a big difference. The icing will stay beautifully on top instead of melting into the warm cookies.
  • ICING: Adjust the icing consistency. For a pretty vanilla icing drizzle, you want the icing thin enough to flow easily but thick enough to show up on the cookies. Add a little more powdered sugar to thicken it or a small splash of heavy cream to thin it out.
  • LET THE ICING SET: Once you’ve drizzled the vanilla icing over the cookies, give it a little time to firm up before placing them in a container. This helps keep the icing looking pretty and prevents the cookies from sticking together.
  • STORING: Store leftover cookies in an airtight container at room temperature or in the refrigerator for up to 5 days. Freeze for up to 3 months. If you’re stacking them, place a sheet of parchment paper between the layers to help protect the streusel and icing.
