These are a fresh and zesty twist on your traditional cheesecake stuffed strawberries. This is also a great make ahead dessert because the filling needs to chill a few hours before filling the berries!

My top tips:
- ELECTRIC MIXER: I do recommend bringing out your electric mixer to make this key lime filling because it makes combining the ingredients a breeze and whips a lot of air into the cream cheese and heavy whipping cream, making the filling extra smooth and fluffy!
- SOFTENED CREAM CHEESE: Softened cream cheese is key in this recipe! It’s super important to make sure your cream cheese is fully softened so that it incorporates into the other ingredients easily and ensures your filling will be super smooth rather than lumpy.
- KEY LIMES: You don’t need to use key limes here! I use regular limes and the taste difference is so minimal it doesn’t justify the extra work of juicing all those tiny limes in my opinion. But feel free to use key limes if you prefer! You can also use bottled key lime juice in a pinch.
- ZESTING: Try to remember to zest your limes before squeezing all the juice out of them. This makes zesting much easier since the lime is still firm and in one piece. Remember to reserve a little lime zest for garnishing these later too!
- CHILLING: As this key lime filling chills in the fridge, it will thicken slightly and become more stable for piping into the strawberries. The filling needs a minimum of 2 hours to chill but can be made ahead of time and stored in the fridge for up to 4 days so you can fill the strawberries at your leisure!
- MELON BALLER: You can use a melon baller or a paring knife to hallow out the inside of each strawberry. I prefer using a melon baller because it prevents me from puncturing the sides of the strawberries.
- DRYING STRAWBERRIES: It’s very important that you dry the inside of each strawberry with a paper towel. You don’t want any excess juice in the strawberries because it will make the whole thing soggy.
- PIPING: Transferring the no bake key lime filling into a piping bag or Ziploc bag helps control how much filling you’re piping into to each strawberry and in turn keeps them nice and neat.
- TOPPING: The addition of graham cracker crumbs on top of these Key Lime Strawberries not only gives them a little crunchy texture, but it also mimics the flavors of a key lime pie with a graham cracker crust. You can buy ready to go graham cracker crumbs from the grocery store or crush 1 or 2 graham cracker sheets yourself.
- STORING: This is one of those recipes that is best enjoyed day of so that the strawberries don’t become too soft or soggy. I do not recommend storing these for more than 1 day in the fridge.
