- 48 tater tots
- 1 lb ground beef i like 90/10
- 1/4 cup yellow onion diced
- 1/4 cup green bell pepper diced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup ketchup
- 2 tsp yellow mustard
- 1 tsp brown sugar
- 1 tsp worcestershire sauce
Preheat your oven to 425 degrees F and grease a mini muffin tin with non-stick cooking spray.
Place 2 tater tots in each cup of a mini muffin tin and bake for 20 minutes.
Remove the tater tots from the oven and use a shot glass or a tamper to press the tater tots down into each cup. This will create a tater tot cup.
In a large skillet, cook the ground beef, chopped onion, bell pepper, and salt and pepper over medium-high heat until the beef is no longer pink. Once meat has browned, drain the grease
Add ketchup, mustard, worcestershire sauce, and brown sugar to the ground beef and stir to combine. Optionally add more salt and pepper to taste.
Fill the tater tot cups with the ground beef mixture and top each one with shredded cheddar cheese.
Place the tater tots back in the oven and cook for another 15 minutes.
Remove the sloppy joe tots from the oven and let cool for 5 minutes before removing them from the muffin tin.
