Sloppy Joe Tater Tot Cups are crispy baked tater tots pressed into bite-sized cups, filled with a savory homemade sloppy joe mixture, topped with melted cheese, and baked until golden!

Ingredients

  • 48 tater tots
  • 1 lb ground beef i like 90/10
  • 1/4 cup yellow onion diced
  • 1/4 cup green bell pepper diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup
  • 2 tsp yellow mustard
  • 1 tsp brown sugar
  • 1 tsp worcestershire sauce

Instructions

  • Preheat your oven to 425 degrees F and grease a mini muffin tin with non-stick cooking spray.
  • Place 2 tater tots in each cup of a mini muffin tin and bake for 20 minutes.
  • Remove the tater tots from the oven and use a shot glass or a tamper to press the tater tots down into each cup. This will create a tater tot cup.
  • In a large skillet, cook the ground beef, chopped onion, bell pepper, and salt and pepper over medium-high heat until the beef is no longer pink. Once meat has browned, drain the grease
  • Add ketchup, mustard, worcestershire sauce, and brown sugar to the ground beef and stir to combine. Optionally add more salt and pepper to taste.
  • Fill the tater tot cups with the ground beef mixture and top each one with shredded cheddar cheese.
  • Place the tater tots back in the oven and cook for another 15 minutes.
  • Remove the sloppy joe tots from the oven and let cool for 5 minutes before removing them from the muffin tin.
