Ingredients

  • 1 bag microwave popcorn roughly 10 cups
  • 3/4 cup creamy peanut butter
  • 3/4 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/4 cup semi-sweet chocolate chips
  • 1/4 cup butterscotch chips
  • 1 tsp vegetable oil

Instructions

  • Line a baking sheet with parchment paper or a silicone baking mat, then pour your popped popcorn into a large mixing bowl, making sure to remove any unpopped kernels, and set aside.
  • In a medium saucepan, combine peanut butter, corn syrup, and sugar. Stir over medium low heat, for 2-3 minutes or until melted and smooth, but not boiling.
  • Quickly pour the peanut butter mixture into the bowl of popcorn and mix to coat the popcorn evenly, then transfer the popcorn onto your prepared baking sheet and spread into an even layer.
  • In a microwave safe bowl, combine semi-sweet chocolate chips, butterscotch chips, and vegetable oil, then microwave in 30 second intervals, stirring in-between, until melted and smooth.
  • Transfer the melted chocolate into a ziploc bag, cut off one end, then drizzle the melted chocolate on top of the popcorn.
  • Let the chocolate set completely before breaking up the popcorn and enjoying!
