Samoa Rice Krispie Treats

Samoa Rice Krispie Treats are chewy Rice Krispie treats topped with gooey caramel and toasted coconut, then dipped and drizzled in chocolate for a fun twist on the classic Girl Scout Samoa cookie!

Ingredients

  • 1 (16 ct) box Rice Krispie Treats store-bought
  • 1 1/4 cups sweetened shredded coconut toasted
  • 3/4 cup caramel dip I use Marzetti brand
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tbsp vegetable oil

Instructions

  • Preheat your oven to 350 degrees F and pour the shredded coconut onto a baking sheet. Bake for 10 minutes, tossing halfway through, or until the coconut is lightly golden brown.
  • In a medium mixing bowl, combine the caramel dip with the toasted coconut, then set aside.
  • Unwrap the Rice Krispie Treats and place them on a baking sheet lined with parchment paper or a silicone baking mat.
  • Scoop 1 tbsp sized scoops of the caramel coconut mixture on top of each Rice Krispie Treat, then use the back of a spoon to flatten the topping onto each Rice Krispie Treat, spreading all the way to the edges.
  • In a microwave safe bowl, combine semi-sweet chocolate chips with vegetable oil. Microwave in 30 second intervals, stirring in between, until melted and smooth.
  • Dip the bottoms of Rice Krispie Treat into the melted chocolate and return to the prepared baking sheet.
  • Transfer the remaining chocolate into a ziploc bag, cut off one end, and drizzle it over the Rice Krispie Treats.
  • Place the treats in the fridge or freezer for 30 minutes to set the chocolate. Once set, carefully break off the excess candy-coating pieces around each Samoa Rice Krispie Treat enjoying!
