Ritz S’mores Cookies

- 48 Ritz crackers
- 1 cup marshmallow fluff
- 1 (12 oz) bag milk chocolate chips roughly 2 cups
- 2 tbsp vegetable oil
- 1/3 cup marshmallow bits
- 2-3 tbsp graham cracker crumbs 1-2 graham cracker sheets (crushed)
Line a baking sheet with parchment paper or a silicone baking mat, then place half of the Ritz crackers upside down on the baking sheet.
Add the marshmallow fluff into a ziploc bag, cut off one end, then pipe 2 tsp of fluff into the center of each cracker.
Place another Ritz cracker on top of the marshmallow fluff, lightly pressing the crackers together to ensure the marshmallow fluff has been distributed evenly.
Combine chocolate chips and vegetable oil in a microwave safe bowl. Microwave in 30 second intervals, stirring between, until the chocolate is melted and smooth.
Working one by one, use a fork to coat the Ritz cookies into the melted chocolate. Let the excess chocolate drip off, then return to the lined baking sheet.
While the chocolate is still wet, sprinkle each cookie with marshmallow bits and graham cracker crumbs.
Transfer to the fridge to set the chocolate coating before enjoying!
