- 2 cups rotisserie chicken shredded
- 1/2 cup pepperoni diced
- 1/2 cup salami diced
- 1/2 cup provolone cheese diced
- 1/3 cup feta crumbled
- 1/3 cup red onion diced
- 1/3 cup roma tomatoes diced
- 1/3 cup pepperoncini peppers diced
For the dressing:
- 1/2 cup mayonnaise
- 1/4 cup parmesan cheese grated
- 3 tbsp red wine vinegar
- 2 tbsp pepperoncini juice
- 1 tsp dried oregano
- 1 tsp garlic powder
- salt and pepper
Cut all the deli meats, provolone cheese and veggies into tiny chopped pieces. The smaller the better.
To a large mixing bowl, add the shredded chicken, pepperoni, salami, provolone, feta, red onion, tomatoes, and pepperoncini peppers, then set aside.
In a medium sized mixing bowl, combine the mayo, parmesan cheese, red wine vinegar, pepperoncini pepper juice, dried oregano, garlic powder, and salt and pepper, then whisk to combine.
Pour the dressing into the bowl with the combined meats, cheese, and vegetables then toss until everything is evenly coated in dressing.
Store it in an airtight container in the fridge for up to 4 days. Serve with veggies, crackers or tortilla chips or on a sandwich!
