Ingredients

  • 2 cups rotisserie chicken shredded
  • 1/2 cup pepperoni diced
  • 1/2 cup salami diced
  • 1/2 cup provolone cheese diced
  • 1/3 cup feta crumbled
  • 1/3 cup red onion diced
  • 1/3 cup roma tomatoes diced
  • 1/3 cup pepperoncini peppers diced

For the dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup parmesan cheese grated
  • 3 tbsp red wine vinegar
  • 2 tbsp pepperoncini juice
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • salt and pepper

Instructions

  • Cut all the deli meats, provolone cheese and veggies into tiny chopped pieces. The smaller the better.
  • To a large mixing bowl, add the shredded chicken, pepperoni, salami, provolone, feta, red onion, tomatoes, and pepperoncini peppers, then set aside.
  • In a medium sized mixing bowl, combine the mayo, parmesan cheese, red wine vinegar, pepperoncini pepper juice, dried oregano, garlic powder, and salt and pepper, then whisk to combine.
  • Pour the dressing into the bowl with the combined meats, cheese, and vegetables then toss until everything is evenly coated in dressing.
  • Store it in an airtight container in the fridge for up to 4 days. Serve with veggies, crackers or tortilla chips or on a sandwich!
