Honey Bun Cake

Ingredients

For the cake batter:

  • 1/2 cup softened butter 1 stick
  • 1 1/2 cups granulated sugar
  • 1/4 cup vegetable oil canola works too
  • 1 1/4 cups sour cream
  • 2 tsp vanilla extract
  • 2 eggs
  • 2 egg yolks
  • 2 1/4 cups all-purpose flour
  • 1 tbsp baking powder

For the filling:

  • 1 cup brown sugar
  • 2 tsp cinnamon
  • 1/2 cup pecan pieces optional

For the icing:

  • 2 cups powdered sugar
  • 3-4 tbsp milk
  • 1 tsp vanilla extract

Instructions

  • Preheat your oven to 350 degrees F and grease a 9x9 baking pan. Set aside.
  • In a large mixing bowl, combine softened butter, sugar, oil, sour cream, vanilla extract and eggs + egg yolks. Once smooth, fold in all-purpose flour and baking powder to form a batter.
  • In a separate bowl, combine brown sugar and cinnamon. Spread half the cake batter into your greased 9x9 pan, then top with the brown sugar and cinnamon mixture. Optionally sprinkle pecan pieces on top. Carefully spread the remaining cake batter on top of the brown sugar layer. Bake for 45 minutes.
  • While the cake bakes, make the icing from powdered sugar, milk and vanilla extract.
  • When the cake comes out of the oven, poke holes around the surface with the prongs of a fork. Pour the icing all over the warm cake, then let the icing set and serve warm or at room temperature.
