- 1 (18 oz) box brownie mix prepared according to box instructions
- 1 cup caramel bits
- 2 tbsp heavy whipping cream
- 1/2 cup butter 1 stick
- 1 cup granulated sugar
- 1 cup evaporated milk
- 3 egg yolks
- 1 tsp vanilla extract
- 1 1/2 cups sweetened shredded coconut
- 1 cup pecan pieces
Prepare your brownies according to the package for a 9×9-inch pan, then let them cool completely.
In a microwave-safe bowl, combine caramel bits and heavy whipping cream. Microwave in 30 second increments, stirring between, until melted. Drizzle over the brownies and set aside to cool.
In a medium sized saucepan, combine the butter, sugar, milk, egg yolks, and vanilla extract. Cook over medium heat for 10 minutes, or until thickened (make sure to stir consistently). Then fold in your shredded coconut and pecan pieces.
Spread the coconut and pecan frosting over top of the caramel layer. Chill before slicing into 16 squares.
