A no-bake dessert is always a winner, and these simple Funfetti Cheesecake Bites are no exception. Velvety cream cheese mixed with funfetti cake mix make these bites a yummy base for coating in even more sprinkles!

Ingredients

  • 1 (8 oz) block cream cheese softened
  • 4 tbsp butter softened
  • 1 (16 oz) box funfetti cake mix heat treated
  • 1/2 cup powdered sugar
  • 1/2 tsp almond extract
  • 3/4 cup rainbow sprinkles

Instructions

  • Heat-treat your cake mix by adding it into a microwave safe bowl and microwaving for 60-90 seconds, stirring halfway through, then set aside to cool completely.
  • In a medium mixing bowl, combine softened cream cheese and softened butter. Using an electric mixer, mix to get rid of any lumps.
  • Add in the heat treated cake mix, powdered sugar, and almond extract, then mix to form a dough consistency.
  • Line a baking pan with parchment paper or a silicone baking mat, then roll the mixture into balls roughly 1 inch in size, placing them on your prepared pan as you go.
  • Pour the sprinkles into a small bowl and roll each ball into the sprinkles, coating completely. Place each ball onto the prepared baking sheet and repeat the process with the remaining cheesecake bites.
  • Refrigerate until ready to enjoy.
