Funfetti Cheesecake Bites

- 1 (8 oz) block cream cheese softened
- 4 tbsp butter softened
- 1 (16 oz) box funfetti cake mix heat treated
- 1/2 cup powdered sugar
- 1/2 tsp almond extract
- 3/4 cup rainbow sprinkles
Heat-treat your cake mix by adding it into a microwave safe bowl and microwaving for 60-90 seconds, stirring halfway through, then set aside to cool completely.
In a medium mixing bowl, combine softened cream cheese and softened butter. Using an electric mixer, mix to get rid of any lumps.
Add in the heat treated cake mix, powdered sugar, and almond extract, then mix to form a dough consistency.
Line a baking pan with parchment paper or a silicone baking mat, then roll the mixture into balls roughly 1 inch in size, placing them on your prepared pan as you go.
Pour the sprinkles into a small bowl and roll each ball into the sprinkles, coating completely. Place each ball onto the prepared baking sheet and repeat the process with the remaining cheesecake bites.
Refrigerate until ready to enjoy.
