Ingredients

  • 4 oz softened cream cheese 1/2 of a block
  • 4 cups powdered sugar divided
  • 1 tsp peppermint extract
  • 1 tbsp milk
  • 1/4 cup holiday sprinkles divided

Instructions

  • In a medium mixing bowl, combine the softened cream cheese, 2 cups of powdered sugar, and peppermint extract. Using an electric mixer, mix until smooth.
  • Add the remaining powdered sugar and milk, then mix until combined. Fold in 2 tablespoons of sprinkles, but be careful not to over mix – the sprinkles can bleed their colors.
  • Roll the mixture into 1 tsp sized balls, if the dough is sticky, try refrigerating it for 10 minutes or dust your hands with powdered sugar.
  • Pour the remaining sprinkles into a shallow bowl and roll the balls to coat them.
  • Place the balls onto a baking sheet lined with parchment paper or a silicone baking mat and refrigerate for 30 minutes.
  • Press each ball flat using the tines of a fork. Aim for about 1/4 inch thickness.
  • Let the mints dry on the counter for about an hour, then store them in an airtight container in the refrigerator for up to 2 weeks or freeze them for up to 3 months.
