Preheat your oven to 350 degrees F and line an 8×15 baking sheet baking pan with parchment paper.
Place your cookie dough into your lined baking pan and press it down to form a crust.
Bake for 20-22 minutes, or until it’s golden to your liking, then remove from the oven and let cool completely.
In a medium mixing bowl, combine softened cream cheese, heavy whipping cream, powdered sugar, and vanilla extract. Use an electric mixer to whip out any lumps.
Evenly spread the cheesecake mixture on top of the cooled cookie crust, then top with your diced strawberries.
In a microwave safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30 second intervals, stirring in-between, until melted and smooth.
Transfer the melted chocolate into a ziploc bag, cut off one end, and drizzle it over the strawberries. Transfer to the fridge to set the chocolate, about 1 hour.
Slice into squares and enjoy!
