Wash and dry your strawberries, then slice off the tops and bottoms to ensure they can stand up straight.
Use a melon baller to scoop out the center of each strawberry, making sure to not puncture through the bottom.
Add one cup of water into a medium saucepan and bring it to a boil. Pour the strawberry jello mix into a large mixing bowl, then pour in the boiling water and vodka.
Whisk to dissolve the jello powder, then pour the jello shot mixture into a measuring cup or some other container with a spout.
Pour the jello mixture to fill each strawberry, then transfer to the fridge for at least 2 hours or until the jello has set.
In a microwave safe bowl, combine semi-sweet chocolate chips with vegetable oil. Microwave in 30 second intervals, stirring in between, until melted and smooth.
Dip the bottom half of each strawberry into the melted chocolate and place them on a baking sheet lined with parchment paper or a silicone baking mat.
Place in the fridge or freezer for 30 minutes to set the chocolate.
