Servings: 24 meatballs
- 1 lb ground beef 90/10 or 80/20
- 1 envelope onion soup mix
- 1/4 cup regular or seasoned breadcrumbs
- 1 egg
- 1 cup cheddar cheese shredded
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp worcestershire sauce
- 1 (10 oz) container cherry tomatoes
- 24 dill pickle chips
- 1 head iceburg lettuce
Preheat your oven to 400 degrees F and line a baking sheet with parchment paper or a silicone baking mat.
Combine the beef, onion soup mix, breadcrumbs, an egg, shredded cheese, ketchup, mustard, and worcestershire sauce.
Roll the mixture into meatballs roughly the size of a golf ball- you can use a 1 1/2 tablespoon scoop to help make them all the same size.
Place the meatballs on your lined baking sheet and bake for 15-18 minutes.
Allow the meatballs to rest for 5 minutes, then skewer a cherry tomato, pickle, and lettuce onto each stick.
Poke a stacked skewer into each meatball, and serve with your favorite dipping sauces if desired.
