- 1/2 cup butter
- 3/4 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 3 cups cornflakes
- 1 cup sweetened coconut
Preheat your oven to 350 degrees F and line two baking sheets with parchment paper.
Combine butter and brown sugar in a medium saucepan. Melt over medium heat until smooth. Set this aside for 5 minutes to cool slightly.
Crack in an egg, add the vanilla and mix one more time! Set that aside, and in a large bowl, combine cornflakes with shredded coconut.
Pour the caramel mixture into the cornflakes and coconut, then mix to combine. Scoop the cornflake mixture into mounds on baking sheets and bake for 10-12 minutes. They’ll be golden and crisp on the outside!
