Equipment

Ingredients

  • 4 egg yolks
  • 2 tbsp Kahlua Liqueur
  • 1/4 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • 16 oz mascarpone cheese from 2 containers

For assembly:

  • 2 1/2 cups strongly brewed coffee
  • 24 ladyfinger cookies from a 7 ounce package

For topping:

  • 2 tbsp unsweetened cocoa powder sifted

Instructions

  • Start by separating the eggs and reserving the yolks. We will not use the whites for this recipe.
  • In a large bowl, or the bowl of a stand mixer, add in the egg yolks, Kahlua liqueur, heavy whipping cream, sugar and mascarpone cheese.
  • Using the whisk attachment or an electric hand mixer on medium speed, whip the mascarpone mixture to a stiff peak (you'll know when it's done because the mixture on the beater will stay upright when its flipped upside down). This should take about 2 minutes in a stand mixer. Then set aside.
  • Next, brew your coffee and allow it to cool for a few minutes just so you don't burn yourself! Pour it into a small, shallow dish and start to QUICKLY dip each ladyfinger. Then transfer them to the 8x8 baking dish.
  • Once you have an even layer of soaked ladyfingers on the bottom of the dish, using an offset spatula, spread half of the creamy mascarpone filling.
  • Repeat this process one more time.
  • Top with a dusting of cocoa powder. Then cover with plastic wrap and refrigerate for at least 2 hours.
