- 4 egg yolks
- 2 tbsp Kahlua Liqueur
- 1/4 cup heavy whipping cream
- 1/2 cup granulated sugar
- 16 oz mascarpone cheese from 2 containers
For assembly:
- 2 1/2 cups strongly brewed coffee
- 24 ladyfinger cookies from a 7 ounce package
For topping:
- 2 tbsp unsweetened cocoa powder sifted
Start by separating the eggs and reserving the yolks. We will not use the whites for this recipe.
In a large bowl, or the bowl of a stand mixer, add in the egg yolks, Kahlua liqueur, heavy whipping cream, sugar and mascarpone cheese.
Using the whisk attachment or an electric hand mixer on medium speed, whip the mascarpone mixture to a stiff peak (you'll know when it's done because the mixture on the beater will stay upright when its flipped upside down). This should take about 2 minutes in a stand mixer. Then set aside.
Next, brew your coffee and allow it to cool for a few minutes just so you don't burn yourself! Pour it into a small, shallow dish and start to QUICKLY dip each ladyfinger. Then transfer them to the 8x8 baking dish.
Once you have an even layer of soaked ladyfingers on the bottom of the dish, using an offset spatula, spread half of the creamy mascarpone filling.
Repeat this process one more time.
Top with a dusting of cocoa powder. Then cover with plastic wrap and refrigerate for at least 2 hours.
