Cheese And Onion Toastie

These cheese and onion toasties are the filled with caramelized onions and gruyere cheese. They're pan fried until golden on both sides with an unbelievable melty interior and have been named to be the ultimate comfort food! Think grilled cheese sandwich on steroids!

  • 4 tbsp softened butter split in half
  • 1 sweet yellow onion thinly sliced
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 4 oz gruyere cheese
  • 4 slices brioche bread I love the one from Trader Joes

Instructions

  • Cut the onion in half, peel back its skin and start to make thin slices.
  • In a large skillet, add 2 tbsp butter (save the rest for buttering the bread) and let that melt.
  • Once melted, add in the garlic and sauté for one minute or until fragrant.
  • Add the onion slices to the skillet with butter and garlic. Season with dried thyme and a little salt.
  • Sauté on low heat, tossing occasionally until the onions are softened and golden in color (takes roughly ten minutes).
  • When the onions are done cooking, set them aside and spread softened butter on one side of each piece of bread.
  • Set the bread (butter side down) in a skillet on low heat. Layer on gruyere, then the onions and a little more cheese on top.
  • Set the other bread slices on top (buttered side up).
  • Let the toastie brown for 2-3 minutes on each side. When done, the cheese should be warm and melty all the way through and the bread should be golden brown.
